A main stay in our house all season always making a courgette 'spaghetti' or also spiralising some beetroot & carrot for a lovely 'noodle' salad. Also lovely diced up in a vegatable ratatouille with diced carrots, beetroot & tomotoes with herbs & spices(freezes well for winter meals too) & nice served on a cauliflower 'rice'.
