Cumin is known to add depth & a touch of smokiness to dishes. Cumin pairs well with Coriander, onions, garlic, ginger, turmeric, chilli peppers, potatoes and oregano.
Originating in Egypt Cumin has been part of Middle Eastern & Indian cuisines for 1000's of years. In Europe whole seeds are used mainly to flavour Swiss and Dutch cheeses(like the Cumin Seed Gouda I make often) or German sauerkraut. While in France and Germany, ground cumin is used in bread, cakes, pasteries, and a liquor called kummel. It is also a component of Garam Masala & Tandoori spice mixes.
