Panela, Rapadura, Brown or Golden sugar is traditional pure, unrefined, whole cane sugar. It is basically a solid piece of sucrose and fructose obtained from the boiling and evaporation of sugarcane juice. As such, panela/rapadura/golden sugar contains the natural goodness of the nutrients inherently present in sugarcane juice. This is why it’s been crowned as one of the most wholesome sugars in the world.
With a taste that’s a cross between molasses and brown sugar, panela is not only a great sweetener but an ideal baking ingredient too as it substitutes very well instead of refined sugars.
